16 Freezer - Crockpot Meals

This little mother bird is nesting like no other, as I'm into my 8th month of pregnancy now I am wanting to prepare some freezer meals to pop into the crock pot for dinner after the baby is born.

With my first bambino I made about 30 freezer meals before he arrived (my first attempt at freezer meals). However, 1/2 of them were precooked (according to recipe/freezing directions) and it felt like we were just eating leftovers all of the time. The other 1/2 of the recipes were O-K, but ended up having freezer burn (foil tin pans).

SO..... this time around I found recipes that were all EASY to just put ingredients into a bag, UNCOOKED beforehand, stored in FREEZER BAGS, and prepared by just DUMPING INTO THE CROCK POT! Woo hoo, this sounds like a recipe for success (ha ha, get it?)!





Freezer Meals for Crock Pot (16 meals)
Took me approximately 2 hours to put together all of the meals. That is less than 8 minutes spent on each meal! 
**Thaw each gallon bag for about 24 hrs before cooking.

Recipes:
Beef--
Mongolian Beef (1 Ziplock Bag)
1 lb. stew meat
2 tsp. olive oil
1 onion, thickly sliced
1 tbsp. minced garlic (jarred)
1/2 cup soy sauce (I used wheat free tamari)
1/2 cup water
1/2 cup brown sugar
1/2 tsp. fresh minced ginger
1/2 cup hoisin sauce
      Dump all ingredients into bag, mix and freeze flat.
Cooking Directions: Cook on low for 6-8 hours. Serve with white rice.

Pot Roast (1 Ziplock Bag)
2 lb roast
1 cup chopped onion, frozen
1/2 bag baby carrots
1 cup chopped celery
1 Tbsp cooking oil
1 tsp basil
1 tsp beef granules
3/4 cup water
1 Tbsp Worcestershire
salt and pepper   
      Dump all ingredients into bag, mix and freeze flat.
Cooking Directions: Add 1 cup beef broth and 4 potatoes cut in half. Cook on low 8-10 hours.

Beef Ravioli (1 Ziplock bag, 1 quart Ziplock bag)
1 lb ground beef, cooked
25 oz frozen ravioli
1 jar spaghetti sauce
1 cup shredded mozzarella cheese
      Dump ravioli, beef and sauce ingredients into a gallon bag, mix and freeze flat. Put cheese in quart bag and tape to gallon bag.
Cooking Directions: Put FROZEN gallon bag into crock pot, cook on high 2-3 hours.  Sprinkle cheese 20 minutes on top raviolis in crock pot, before you are ready to serve.

French Dip Sandwiches (2 Ziplock Bags)
1 lb beef chuck roast
14.5 oz beef consommé
hoagie buns
      Dump beef and consomm√© into bag, mix and freeze flat in 1 bag. Put buns into the other Ziplock bag and tape the two bags together.
Cooking Directions: Cook on low for 8 hours. Shred meat  when finish cooking. Serve on hoagie buns and French fries.

Chicken--
Chicken Soft Tacos (1 Ziplock bag)
3 chicken breasts, whole
1 pkg taco seasoning
1 can Rotel tomatoes & green chilies
1/2 cup frozen onions, chopped
      Dump all ingredients into bag, mix and freeze flat.
Cooking Directions: Cook on low 4-5 hours. Shred chicken with forks when finished cooking. Serve with tortillas and Mexican rice.  

Chicken Cacciatore (1 Ziplock bag)
2 chicken breasts
26 oz. chunky vegetable-style spaghetti sauce
1 zucchini, chopped
1 cup frozen green pepper, chopped
1 cup onion, chopped
      Dump all ingredients into bag, mix and freeze flat.
Cooking Directions: Low for 6-8 hours. Serve with spaghetti noodles and sprinkle with cheese.

Chicken Alfredo (1 Ziplock bag)
2 chicken breasts
32 oz light Alfredo sauce
1 cup green pepper, chopped
4 oz sliced mushrooms, drained
      Dump all ingredients into bag, mix and freeze flat.
Cooking Directions: Cook on low for 4-6 hours. Serve with fettuccine noodles.

Enchilada Wraps (1 Ziplock bag)
3 chicken breasts
28 oz Enchilada sauce
1 cup frozen onion, chopped
1 cup frozen green bell pepper, chopped
1 can corn, drained
3/4 cup shredded cheese
      Dump all ingredients into bag, mix and freeze flat.
Cooking Directions: Low for 6 hours or high 4 hours. Shred chicken once cooked. Serve in tortillas with Mexican rice.



Pork Chops--
Teriyaki Pork Chops (1 Ziplock bag)
2 pork chops
salt/pepper
1 cloves garlic, minced
1 Tbsp brown sugar
1/8 cup soy sauce
1/6 cup chicken broth
      Put all ingredients in bag.
Cooking Directions: Cook on high in crock pot for 4-5 hours or low for 6-7 hours.  Serve with white rice.

Ranch pork Chops (1 Ziplock bag)
4 pork chops
ranch seasoning dry mix packet
1 can cream of chicken
1 can water
      Place all ingredients into  bag. Toss, knead, and flatten bag to freeze.
Directions: Thaw overnight in refrigerator. Cook in crock pot for 4-6 hours on high.  Serve with mashed potatoes and corn.

Oh So Easy Pork Chops (1 Ziplock bag)
2 pork chops    
3/4 cup fruit preserves of your choice
1/4 cup teriyaki sauce
1 tsp dried ginger
1/8 cup Dijon mustard
      Place 2 Pork Chops in Bag and cover evenly with matching sauce.
      Toss & Knead Bag so Pork Chops get covered evenly.
      Flatten Bag & Freeze.
Cooking directions: Crockpot for Low 6-8Hrs/High 3-4 Hrs. Serve with baked potatoes and green beans.


Marinated Pork Chops (1 Ziplock bag)
2 Pork Chops
1/8 cup Soy Sauce
1/8 cup Vegetable Oil
1/8 cup Worcestershire Sauce
2 tsp lemon juice
1/4 cup Brown Sugar
1/4 cup Ketchup
      Place Pork Chops in bag
      Cover evenly with matching Sauce
      Toss & Knead Bag so Pork Chops get Covered Evenly.
      Flatten Bag & Freeze
Cooking Directions: Crockpot for Low 6-8Hrs/High 3-4 Hrs. Serve with chicken flavored rice and green beans.

Soups--
Chicken Enchilada Soup (1 Ziplock bag)
2 chicken breasts, cubed
1/2 cup onion, chopped
15 oz crushed tomatoes
10 oz red enchilada sauce
4 oz green chilies, chopped
14 oz chicken broth
14.5 oz corn, undrained
1 tsp cumin
1 tsp chili powder
1/2 tsp dried cilantro
1 tsp salt
1/4 tsp pepper
1/4 tsp crushed bay leaf
      Place all ingredients in bag, toss, freeze flat.
Cooking directions: Crockpot for low 6-8 hours. Cut chicken into cubes and add back into soup, just before serving.

Chicken & Black Bean Chili (1 Ziplock bag)
2 chicken breasts
28 oz tomato sauce
15 oz. black beans
15 oz corn
1cup onion, chopped
2 stalk celery, chopped
1 pkg chili seasoning
1 clove garlic, minced
      Put in bag, toss, flatten and freeze.
Cooking directions: High 4-6 hours. Shred chicken with forks just before serving.

Savory Beef Vegetable Soup (1 Ziplock bag)
1 lbs stewing meat
1/2 cup chopped onion
1 minced clove of garlic
1 cup frozen carrots, chopped
2 celery stalks, chopped
4 small red potatoes, chopped
8 oz. tomato sauce
1 cup frozen green beans
1/2 Tbsp Worcestershire
2 cans cream of mushroom soup
1 pkg dry onion soup mix
      Put all ingredients in bag, toss, freeze flat.
Cooking Directions: Cook on low 7-8 hours or high 5-6 hours.   

Cheesy Potato Soup (2 Ziplock bags)
32 oz frozen southern style diced hash browns
1/2 cup frozen chopped onion
1/2 cup  diced celery
 32 oz. chicken broth
1 cup water
3 Tbsp flour
2 Cups shredded cheddar cheese
      Place hash browns, onion, celery, broth and water a gallon bag. In another freezer bag place: 3 Tbsp flour and 2 Cups shredded cheddar cheese, and the pkg of turkey bacon. Tape together gallon bags. Toss and freeze flat.
Cooking Directions: Cook on Low 6-8 hours. Add 1 cup milk, flour and cheese to soup after 6-8 hours of cooking, and then let cook another 20-30 minutes in slow cooker. Microwave turkey bacon to garnish if desired.

Hoagie Buns (4-6)
2 pkg- Tortillas

1 very small piece ginger

1 cup Shredded Mozzarella
4 cups Shredded cheddar

4 bags chopped onion
2 bag frozen green pepper
1 bag frozen sliced carrots
1 bag frozen green beans
32 oz. frozen Southern style diced hashbrowns
25 oz raviolis
1 bag frozen French fries

Other
2 cups white rice
2 pkgs Mexican Rice   
1 pkg chicken rice
Spaghetti noodles
Fettuccini  noodles
Instant mashed potatoes
